This vegan Waldorf salad is easy to make and loaded with texture and flavor! Made with crispy apples and celery, juicy grapes and toasted walnuts in a creamy yogurt dressing, it’s a great side dish or starter for any occasion.
Ingredients
- ½ cup chopped walnuts (Note 1)
- 1 (5.3 ounce or 150 gram) container plain or vanilla vegan yogurt (Note 2)
- ¼ cup vegan mayonnaise
- 1 tablespoon lemon juice
- 1 medium sweet apple (such as Honeycrisp), diced
- 1 medium tart apple (such as Granny Smith), diced
- 1 ½ cups seedless grapes, halved
- 1 cup diced celery (about 2 stalks)
- Pinch salt, optional
- Bibb lettuce leaves, optional, for serving
Instructions
Preheat the oven to 400°F.
Spread the walnuts evenly on a baking sheet and place them into the oven for about 5 minutes, until they darken slightly. Watch them closely to prevent burning.
Place the baking sheet on a cooling rack and let the nuts cool while you prepare the remaining ingredients.
Whisk the yogurt, mayo, and lemon juice together in a large bowl.
Add the apple, grapes, celery, and walnuts to the bowl. Stir everything to combine the ingredients.
Taste-test the salad and adjust any seasonings to taste. You can add a pinch of salt if you’d like.
Serve alone or over lettuce leaves.
