The perfect rich Keto Chocolate Cookies, only 1 net carb each! The perfect low carb dessert when you need to satisfy your sweet tooth!
Ingredients
- 1/2 cup butter, melted (8 tablespoons)
- 1/3 cup coconut flour
- 3/4 cup confectioners monkfruit sweetener
- 2 large eggs, beaten
- 1/3 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup Lily’s sugar free chocolate chips
Instructions
Step 1
Preheat oven to 350 degrees.
Step 2
In a medium size mixing bowl combine the melted butter, coconut flour, sweetener, eggs, baking powder, cocoa powder, salt and vanilla. Mix until a thick batter forms.
Step 3
Fold in the chocolate chips.
Step 4
Grease a baking sheet or line with a silicone baking sheet.
Step 5
Use a standard size cookie or ice cream scoop (about 1.5 inches wide) to scoop the batter onto the baking sheet. Lightly press the batter down (just lightly, do not flatten)
Step 6
Bake 8-10 minutes until cookies are set, allow to cool completely.
